Kurume Ramen

Had lunch his weekend and ate Tonkotsu Ramen, which is a pork bone-based broth. It has a milky consistency as the marrow and fat is cooked into the broth. Unsure if this broth also contains chicken or vegetable stock. The restaurant is located on the 8th Floor of More’s City in Yokosuka, called Kurume Ramen Tetsukama. Their number one special, according to their website, is the Kurume Ramen Special.
#1 Kurume Ramen Special

For ¥880, you get a generous serving of ramen, in a rich pork-based broth. The ramen includes a soft boiled egg, bamboo shoots, crunchy seaweed, sweet braised pork (similar to ones I’ve tasted that were braised with Awamori Okinawan wine), green onions, and nori sheets. I believe the waiter asked if I wanted more nori on the side, but my answer must have gotten lost in translation because he never returned.

The large serving of pork just fell apart and melted in my mouth. I didn’t have any side condiments, which were readily available at your table, including fresh garlic, pickled ginger, and sesame seeds. Honestly, the meal didn’t need any more seasoning to take away from the taste. The consistency of the broth was velvety and rich, and can’t wait to try a different dish next time.

The restaurant is very efficient as you select and pay for your meal via a vending machine. The waiter quickly delivered the ticket to the two awaiting chefs behind the kitchen and seated us in an alcove fronting the restaurant that can hold 5 people each. On the opposite side of the kitchen, the dining room has a large family-style table with stools on both sides of the table. Additional traditional seating was also available.
